Chai Spiced Nuts!
Chai Spiced Nuts is definitely one of our most popular items. If you're a regular at the Baker's Market and you like nuts, you would have probably tasted it and enjoyed it! This is how it's made with a great adapted recipe of Chef Karen Barnaby's. I start off with getting the best quality nuts I can find; whole almonds, cashews, hazelnuts, walnut halves and pecan halves. I pick through all the nuts, and take out the broken pieces during transporting. I coat all them with egg white I've beaten until frothy, then stir in the sugar and spices mixture which includes cinnamon, cardamom, cloves, ginger, fennel seeds, nutmeg, black pepper and sea salt and unsweetened shredded coconut. I stir until all the nuts are evenly coated. Bake in the oven at 350F for 20 minutes. Yum! Yum!
Chai Spiced Nuts is my best pick for nibbles for the holiday season!

Happy 50th Birthday to Bernie!
New record!
We had our most successful day at the Baker's Market yesterday! My dear friends Ena and Jeannie were such great help, they didn't only help packaging my cookies Friday night, they also gave up a day-off to come help me out at the Baker's Market. It was the busiest day ever and we made a new record of selling out in less than two and a half hour, which was 1:30 pm! We spent the next hour on giving out samples and taking pre-orders. I apologize to the late comers who arrived the market after 2:30 that we didn't even have anything left for them to taste!
It would have been so impossible to do it without Ena and Jeannie. Big fat THANK YOU to them again and to everyone who dropped by yesterday and placed your holiday gift orders!!
Thank you so much for supporting your local home bakers!

This year, I'll continue to do so however I was told by some clients that they would love to have me put together some baskets and boxes so they won't even have to think! Always my pleasure to help...
Here I have some awesome gift options for only 10 dollars!
Picture on top; 6 oz. bag of Chai Spiced Nuts

Baker's Market on November 27th
It's very exciting! It's our first time at the new location of Baker's Market. I love the Creekside Community Center at Olympic Village. It's so convenient for us as we're Downtown, right across the Cambie Bridge.
I had a little accident first thing in the morning, didn't know about the safety switch under the table supplied and it collapsed when I was half way setting up. Thank god with all my wonderful fellow vendors helping, I didn't lose anything except my coffee. It's amazing! I was able to cover all the coffee stains on the linen, no one could tell. I was able to wash off all the stains on my white table cloth when I got home as well! Saved! Gotto say I love the Baker's Market and how all bakers get along and support each other. It's a very wonderful thing!
A sample gift box I had quickly put together. Cookies shifted a bit cause of the accident I had. In this box, half dozen each of My Mom's Favorite Ginger Snap Cookies, Karen's Instant Ecstasy Chocolate Cookies, Rosemary Parmesan Shortbread, Lavender Vanilla Shortbread, as well as half pound of Chai Spiced Nuts. That is a lot of srumptiousness for only 45 dollars. Nicely presented as a homemade gift filled with love!

Joy Luck Dragon Phoenix!
I've just entered the Cathay Pacific Art of Dessert Contest on facebook with my creation named Joy Luck Dragon Phoenix inspired by dim sum which consists four major parts. Starting from top to bottom; first, Ginger Soy Brown Sugar Panna Cotta which is tofu pudding with a twist. Secondly, Black Sesame Crepe Cake which reminds me of a thousand layered cake with a different filling and different pastry. It's black sesame pastry cream spreaded between layers of crepe. Third one is a Red Bean Meringue Cookie inspired by classic dessert Gao Li Dou Sha which is a deep-fried egg white dumpling filled with red bean paste. Last but not least, Poached Asian Pears with Jasmine, reminds me of a sweet soup my mom-in-law makes all the time. I poached the pears in rock sugar syrup infused with Jasmine.

Westend Farmers Market
It was cold and windy this morning, I struggled to get out of bed and headed to the farmers market cause it's our last one this year. A giant coffee kept me company during my 15-minute walk. As I arrived Nelson Park, the sun began to shine! Awesome! It was great to see all my favorite farmers and vendors and stock up on some great local organic produce.
Can't wait to go check out the new Winter Farmers Market that starts on November 6th at Nat Bailey Stadium.

Baker's Market in 6 hours!
Guess I'm a little over excited...I can't fall asleep...why don't I write about what bah! has to offer tomorrow at the Baker's Market.
Our best seller, it's been the most popular item since Day 1; Lavender Vanilla Shortbread. What's in it? Culinary dried lavender from Full Bloom Farm in Langley, organic whole vanilla bean from the Kingdom of Tonga.
There will also be Rosemary Parmesan Shortbread, however only 4 dozens cause I run out Parmesan Reggiano...yes...the real stuff. I also use organic rosemary.
In Chai Spiced Nuts, I like to use Chai Masala from the T Tearoom., and add extra cinnamon and black pepper into it.
Golden West Organic Apple Muffins I've talked about in the previous posts.
Double Cranberry Ginger Orange Ginger Loaves, has both fresh and dried cranberries in it to give different textures, sweet and tartness.
Last but not least, Pumpkin Pecan Maple Loaves, they smell yummy just like fall!
Hope to see you all at the market!

Royal Gala won the first round
I was experimenting all three types of apples I got from Al. It's extremely tough to decide which I use in my Golden West Organic Apple Muffins...
From top to bottom:
-Honey Crisp- well-balanced, incredibly juicy
-MacIntosh- tender, aromatic, juicy
-Royal Gala- firm, crunchy, sweet, slightly tart, juicy
They are all wonderful eating apples to begin with and they also make fabulous muffins, after too many times of tasting, I announce Royal Gala has won this first round. Feel free to drop by bah! for a free sample of these delicious Golden West Royal Gala Apple Muffins at the Baker's Markets this coming Saturday!

bah! Golden West Farms Crossover
Everyone who loves shopping at our local farmers' markets gotto be familiar with Golden West Farms, or at least had their beyond yummy cherries, peaches and apples. I've been a huge fan for years. Soon I'll be baking apple muffins with their certified organic apples. Golden West Organic Apple Muffins will be available for as long as the apple season lasts. I'm super excited.
Al, one of my favorite farmers, super nice man, passionate about everything he grows, he is at the West End Market every Saturday until October 23. He was too shy to have his picture taken but I'm sure you will all recognize his gorgeous apples and the lovely sign says Golden West Farms!
